Tomato Horseradish Relish Recipe on Team 1040

A special thanks to Chef Tyrell Brandvold of Chewies Steam & Oyster Bar in Vancouver who prepared a delectable Tomato Horseradish Relish to accompany fresh shucked oysters. With Super Bowl around the corner, Canadian Sales Manager Carol Glancy, along side Richard Chew owner of Chewies stopped by the Team 1040 Vancouver Sports Saturday show with Bob “The Moj” Marjanovich & Chris Burns to share the creation and talk fresh, local ingredients and appetizers for the big game.

Chewie’s Houweling’s Tomato Horseradish Relish

  • 1 cup mixed colour Houwelings tomatoes (use any mix of: Orange TOV, Yellow TOV, Signature Heirloom, Cherry Tomatoes, Strawberry Tomatoes, Cocktail Tomatoes) peeled, seeded and finely diced
  • ½ Cup Cucumber, seeded, finely diced
  • ½ Cup Red Onion, finely diced
  • 2 tablespoons fresh horseradish root, peeled and grated with a fine microplane
  • 2 tablespoons red wine vinegar
  • Juice of one lemon
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon green onions, thinly sliced
  • 1 tablespoon parsley, minced
  • Salt and pepper to taste

Mix ingredients together and allow to marinate in fridge for a least an hour.  Overnight is even better.
